Crispy golden fries under rich house gravy and fresh cheese curds, finished with crispy bacon crumble, green onions and garlic aioli. Canada’s national comfort dish, loaded the way a downtown London kitchen and bar should do it.
Poutine only works if the fries survive the gravy. Ours are fried until the outside is properly crisp so they hold their structure once the hot house gravy goes over them, and the cheese curds are fresh so they soften and squeak rather than melting away into the sauce.
From there we load it: crispy bacon crumble for salt and crunch, green onions for a sharp green note, and garlic aioli drizzled over the top for richness. It is a starter on paper, but it is more than enough to share between two people alongside a pint.
