The batter is the signature. It is mixed in house and fries into a light, crackling shell that seals the haddock so the fish steams inside and stays flaky rather than drying out. Cut into it and the fish should come apart in clean sheets.
The plate is finished the traditional way and then some: golden fries, creamy tartar sauce, house-made coleslaw for acidity and crunch, and a mashed pea purée that gives the whole thing a fresh, sweet counterpoint. It is a proper sit-down dinner rather than a basket of fried fish.
